Peel the pear leave the stem on. Once the cider is simmering put the pear in for 20-30 minutes. Remove the pear with a spoon and let cool. Place a smear of mascarpone on a plate and set aside. Crank up the heat on the liquid and allow to thicken, then pour liquid over pear and place the caramel on top. In advance create the Blue cheese compound butter. Crumble the blue cheese into softened butter. Mix well and roll into a tube in wax paper. Put in refrigerator to chill. Cut a medallion of the lamb chop and slater with the butter. Serve with a roasted root vegetable medley. Pair with Ektimo Pinot Noir 21:05 Chris will also take guests through barrel samples too. Directions: Heat oven to 450. On a rimmed baking sheet toss the chicken with olive oil and turmeric and place the chicken skin side up and then pour the vinegar around the chicken and place in the oven for 25-30 minutes. Then take the chopped up olives with the remaining 2 tbs. olive oil and stir into the juices from the sheet pan. Spoon olive mixture over the chicken and serve. Garnish with parsley. Then make a well in the dry ingredients and pour in the milk and egg mixture and gently stir with a wooden spoon. Let it rest in refrigerator for 30 minutes before making the noodles. The using a Spätzle maker pour in the batted and move over a pot of boiling water, then scoop out with a slotted spoon and enjoy! About a ¼ cup of each. Directions: Marinate the Tri Tip overnight and set up barbecue for indirect. Start by searing the meat over direct heat on each side then move over to the indirect part of the grill. Leave it there for 10-15 minutes. Then place the tri tip in a foil lined ice chest and let it sit in the “hot box” for 20 minutes to redistribute the juices in the meat. And when you cut into it it’s incredibly juicy. Also new is La Catola, a blend of Cabernet Sauvignon and Sangiovese. 7:22 Fast Five Recipe – Baked Salmon with Honey Mustard Glaze from Jesse Malvesti of David Coffaro Winery. Ingredients:Salmon Stone Ground Dijon mustard Honey Fresh Tarragon leaves Olive oil Directions: Pre-heat oven to 375. Place salmon on a baking sheet. In a small bowl mix all other ingredients together. Spoon half the mixture over the salmon in an even layer. Place in oven for 15 minutes. Remove from oven and spoon the remaining mixture over the salmon and put back in the oven for another 5-10 minutes till done and fish flakes easily. That’s it! Pair with David Coffaro Dry Creek Pinot Noir. 10:30 Craig started blending seminars for customs to make their own blend of wine that they can take home. Colagrossi Zoom events are big fun.
